Coffee cherry skins used to be a waste product of the coffee production process. A couple of years ago, people found out that dried coffee cherry skins are actually quite delightful. This Side Up and the Argote family decided to start exporting as much cascara as they could produce to Europe to get people acquainted with this product. People starting brewing sodas, tea and syrups and even made baking recipes with it.

At that time, Efrain Argote did not have enough drying space to turn all cherry skins into cascara, so some had to be used for compost. However, since we helped them build new drying beds, they have been able to produce more and more cascara, allowing for a lot of extra income with hardly any extra costs.
