In my early days of Shokunin, I was looking for a chocolate-oriented flavor profile that would work well in horeca. I actually didn’t want it to be a Brazilian coffee, and at the time, there also weren’t any Brazilian farms I could build interesting, innovative projects with at scale. So when I found this one, from a modern farm that welcomed plantation visits and even had a social media presence, it immediately caught my attention.
Later, I learned they worked organically and supported other farmers through their cooperative, which made me feel like this was a coffee I could work with for a long time. And that turned out to be true! After a few years, Fontana replaced it as my standard coffee for cafes, but I still keep this one in the lineup as a comfort coffee.
Fun fact: this was one of the first coffees I ever sold, and it became the model for all the coffee photos on my website. If you look closely, you can see that this product page features a real photo and not a photoshopped image.
